Potato is an excellent source of vitamin C, and it contains more potassium than a banana. Studies tell us that diets rich in potassium and low in sodium can reduce the risk of hypertension and stroke. More and more evidence also suggests that increasing dietary potassium can negate some of the negative effects of dietary sodium on blood pressure. Decreasing sodium along with increasing potassium provides greater heart disease protection than intervention alone.
