The carrot roots contain high quantities of alpha-carotene and beta-carotene, and are a good source of vitamin A, vitamin K and vitamin B6, the belief that eating carrots improves night vision is workable for somebody who is lack of Vitamin A. The most commonly eaten part of the carrot is the taproot, although the leaves and stems could be eaten as well.
The temperature range to store fresh carrot of 32 to 40 °F (0 to 5 °C) is best.
